The bakery

Experience tradition - enjoy mill romanticism

The baker starts at 2 o'clock in the morning with the heating of the large old German wood stove. The fresh baked goods are available daily directly in the bakery: crispy-fresh bread, rolls and cakes - as big as a cartwheel - traditionally baked in a wood oven and all in organic quality.

Walk on Malerweg directly through the mill and watch as the miller and baker measure, stir, knead and heat. But hurry: after sunset we close the room, because the baker has to go to bed now.

The bakery

With us is still baked in the traditional old German wood oven - as it once did the miller Hänsel 350 years ago!

1665 laid the miller the cornerstone for the place Schmilka on the Elbe in the Saxon Switzerland. Of painters and Swiss travelers around 1800 as inn and night quarter much visited, lost it in 19. Century at economic meaning. Thus, since 1875 the Mahlmüllerei and since 1881 the Brotbäckerei were silent. But since 2012, the Schmilka mill is reopened.

Since then, we bake daily various rolls and breads, cake-sized cakes and hearty and sweet particles to the whim of the baker. As a highlight and just in time for the winter village there are cookies and traditional stollen at Christmas time.

Only organic spelled is processed in our grinding mill. Spelled is a particularly nutritious grain, a kind of primal wheat. In contrast to today's wheat, which was bred over thousands of years and is suspected to trigger allergies, wheat allergy sufferers can consume our spelled products without hesitation. The spelled grain is demanding in the processing, which is why our baker must use all his craft skills.

The valuable Marc from the organic brewery is also used by our baker. The crumbled and mashed brewing cereals, full of proteins and vitamins, are sometimes baked in bread rolls and baked goods.

By the way: All overnight guests in Schmilka   can enjoy the crispy baked goods   from the bakery for breakfast.

Bakery tours

Experience traditional crafts and get to know the functioning of the mill! For connoisseurs and lovers, we offer in our historic, fully functional, lovingly restored water mill in Schmilka, daily an interesting and expertise-based leadership. Here you will be given an insight into the historical production processes and the functioning with all its facets of our superficial watermill. Experience with all your senses how organically grown grain, with technical sophistication, becomes stone-ground flour. It's best to try the oven-warm products from our wood-burning bakery next door.

Enjoy with safety

Frisch und gesund ist unsere Bio-Vital-Küche. Alle Zutaten in unseren Speisen und Getränken stammen aus kontrolliert biologischem Anbau. Einen überwiegenden Teil beziehen wir aus der Region. Das Streuobst für unsere Säfte und wagenradgroßen Kuchen ernten wir in Thürmsdorf, Käse und Joghurt bekommen wir vom Kanzleilehngut Halsbrücke, der Ziegenkäse kommt aus Lauterbach und das frische Gemüse im Sommer aus dem eigenen Garten an der Elbe.

Vegane und vegetarische Küche sowie Vollwertkost gehören bei uns zum Standard. Auf Wunsch bieten wir Diätküche. Dazu gibt es die passende Weinempfehlung aus unserem ausgesuchten Bio-Weinsortiment sowie hausgemachte Bio-Limonaden, das Bier aus unserer eigenen Bio-Braumanufaktur und frisches Granderwasser aus allen Leitungen im Biohotel Helvetia.
